Dilston Pear and Nutmeg Teacake

February 20, 2013 By webadmin

This teacake is based on a recipe from www.taste.com.au. I used pears grown at Lee’s Orchard, only 1.5km from our house at Dilston.

Ingredients

200g butter

3 small ripe pears, peeled, cored, cut lengthways into slices

3/4 cup caster sugar

2 eggs

1 1/2 cups self-raising flour

1/3 cup milk

1/2 tsp ground cinnamon

20g butter extra

2 tbs sugar

Nutmeg

Method

1. Preheat oven to 180°C. Grease loaf pan. Melt 20g of butter in a frying pan over medium heat until foaming. Add the pear slices and cook until golden and almost tender. Remove from heat. Arrange pear slices over the base of pan.

2. Beat together remaining butter and sugar until pale and creamy. Add the eggs, stir in the flour, milk and cinnamon until combined. Pour cake batter over pears.

3. Bake in oven for 35-40 minutes. Remove from oven and turn pear side up on to a wire rack. Set aside for 5 minutes to cool before sprinkling with sugar and nutmeg.

4. Enjoy while warm!
